The Samseon Gan-jjajang (dry black bean noodles with seafood) serves as a masterclass in traditional preparation. The black bean sauce, stir-fried over high heat right after ordering, strikes a seamless balance between crisp vegetables and a rich, savory soybean flavor. True to classic tradition, it is topped with a fried egg—a charming touch that adds both nostalgic warmth and richness to the dish.
