From the heart of Maxwell Food Centre, The 1950’s Coffee (五十年代) serves a cup of nostalgia that has earned its place in the Michelin Guide. While many come for the traditional Kopi, the Kopi Gu You (Butter Coffee) is a velvety, high-energy relic of Singapore’s early history. I tried butter coffee in other places, this wea my first experience here. A young man was toasting bread, spreading kaya and adding square pieces of butter on toasted bread, slicing and serving on plastic plates. The lady boss got my request, made the coffee to go in a papercup. She walked to the young man, he put a slice of butter in it, lady boss came back to the counter and placed the coffee on the counter. She spied the butter slice with a critical look, returned to the young man for a second butter slice. Wow, great attention to detail. She put on a lid onto the cup, handed it over to my eager hands. I walked to my appointment, opened the lid and saw the coffee had a nice oily sheen on the surface. Sipping it was an interesting medley of butter, condensed milk, local roasted coffee. The coffee glided down with no resistance. Why the Butter? In the 1950s, opium smokers and hardworking labourers at the docks added butter to their Kopi to soothe their throats and provide a heavy caloric boost for the day's toil. Today, the tradition is kept alive for the coffee drinker for an oily smooth coffee drink. Enjoy. Meal type: Other Food: 5 Service: 5 Atmosphere: 5
