Everyone has a list of "must-visit" bars in Chiang Mai. Somehow, Brine isn't on it. Let's keep it that way. I'd actually like a seat the next time I come. I ended up here with my Thai friends and somewhere between the first cocktail and the last conversation, this quietly became my favourite bar in Chiang Mai. The Kimchi Passion deserves its own chapter. As a kid, I spent years negotiating with vegetables. Suddenly there's dried spicy kimchi sitting on top of a cocktail, and I'm treating it like the guest of honour. Life has a wicked sense of humour. The drinks are fearless. Sweet, savoury, smoky, spicy... somehow everything shakes hands instead of arguing. Every cocktail felt like someone asked, "What's the strangest idea that could actually work?" and then hired very talented people to prove it. The bartenders were wonderful to talk to. You can tell they genuinely love what they're creating, and that enthusiasm somehow ends up in the glass too. Special thanks to Dutch for his recommendations . I'm usually the kind of person who checks my bank balance before ordering another drink. Brine turned that into tomorrow's problem. If cocktails had a vegetable rebellion, this would be headquarters. And I'd happily enlist again. Price per person: ฿600–800
