This shop is from a chain that I first encountered decades ago in NYC. They make excellent cream puffs with a perfect, crispy Choux with their world class Rational Combi oven—by the way that is my dream oven. The cheapest ones are $16k and up. It’s so cool it even has a built-in dishwasher—in the oven. But I digress. These are some of the best cream puffs I’ve had outside of Paris. . Sadly the owner of this franchise has situated the shop in a horrible spot—the rear backwater corner of the ground level in the food court at Central Festival mall. Don’t be dissuaded by the obscure location and proximity to the not so good bakery across the aisle from them. These cream puffs contain homemade fillings like the excellent pastry cream and are made fresh to order, including dipping in chocolate glaze and filling. I say make the trip and go seek it out!
