Best food we’ve had during our 5 day stay in Niseko. Also a lovely, minimalistic interior. The cod was perfect and the chicken karaage the best I’ve ever had. Also the background music had a really chill vibe. Exactly what we needed after a long day on the slopes. We visited Calder this evening to celebrate our friend’s 50th birthday, and it was a truly exceptional experience. Although I didn't think to take photos earlier in the night, the seafood tower was unbelievable. The chicken katsu was the best I have ever tasted, and the steak quite literally melted in my mouth. I don't have much of a sweet tooth, but I absolutely demolished both desserts. We dined at Pirka a few nights ago, which was excellent, but Calder was even better and cost less than half the price. The service provided by Varmen and the other waiter was unbelievable. It was the best service I have experienced in a very long time, and I dine at many restaurants. They even gave the children marshmallows to toast over the fire outside while we finished our drinks. The only reason this isn't already the top restaurant in Niseko with a waitlist for months is that it is located a little away from the hotels. If I were the owner of this establishment, I would start a free shuttle service and notify the hotels. Once word spreads and transport is easier, I predict this will be the number one place in town.
