We celebrated a birthday tonight at Cava Fuoco, and honestly, what a ride. We got seated right at the bar, which meant VIP front-row seats to the chefs doing their magic. The highlight of the starters was definitely the charcoal-grilled North Coast squid with Middle Eastern hummus — a combo I’ve never tried before, but wow the layers of flavor were unforgettable. The Egyptian molokhia lamb soup was another surprise: rich lamb aroma, tons of spices, and a flavor profile that just kept building and building. Chef Ito was incredibly warm and friendly — he even treated us to a bowl of rice that locals usually enjoy with the soup. And of course, mixing them together instantly created a whole new flavor universe kind of like a Middle Eastern lamb risotto moment. Loved it. The charcoal-grilled aged grouper was also spot-on: light, clean, but still packed with flavor. And dessert? Their kunafa, made with rice noodles, pistachios, cheese, and thyme ice cream, is absolutely worth ordering. A big shout-out to the team for the birthday surprise and even singing for us — super sweet gesture. Overall, it was such a great dining experience, and we really enjoyed chatting with Chef Ito throughout the night.
