This place is a local gem. Duan Chun Zhen does one thing and does it exceptionally well. The hand-rolled noodles have that rustic, homemade quality. Delightfully chewy without overdoing it. The broth is where this place really shines. It's complex and delicate, with precise flavors that don't muddle together the way some beef noodle soups can. Not too oily, and 100% consistent with what you'd expect from proper Taiwan-style beef noodle soup. The beef pieces are generously sized, tender, and packed with flavor. If you're into cartilage, theirs is excellent. Everything about this bowl delivers on its promise. Don't skip the sides. They have a system where you pick out lu food items like tofu, bean curd, and tripe. They cut it up, cook it, and plate it for you. Comforting stuff that pairs perfectly with the soup. The house pickled vegetables are the ideal accompaniment. Crisp and sour with just the right hit of acid and crunch to cut through the richness. The plum drink is also a great pairing. Service is efficient and knowledgeable. Even at its busiest, you're looking at maybe 10-15 minutes for a seat. Ordering is done via QR code, so if you're not confident with written traditional characters, no problem. Food comes out fast. This is one of those focused, no-frills spots you can return to again and again. Highly recommend.
