Look and taste like an over cooked, over-nite kuay chap dish due primarily to excess stock of ingredients as customers seem to have disappeared from this once busy stall in a popular coffee shop at Blk 138, next to the landmark Tampines Round Market. Although the big intestines and towpok from my $4.50 kway chap are limp, broken and soggy, it’s still edible thanks to the preservative quality of the salty soya sauce gravy where it had been stored, in a typical large metal basin.
No heart to complain to the elderly couple earning a meagre living, doing a very tedious work of thoroughly cleaning, washing and cooking the large quantity of pork knuckles, pig skin, pig’s organs and ancillary items for the kway chap and pig organ soup. Although there are not many regulars and walk-in customers expected nowadays, they still need to cook enough of each item just in case...to keep customers happy and the business ongoing, storing overnite, whatever quantities that are leftover
Hopefully enough customers will return to the stall asap to enable them to justify continuing a traditional business, old age aside, which they have been engaged in almost all their life. In time like this we need to be tolerant, show compassion and understanding when we are not served the level of quality we took for granted from the elderly couple.. and learn to accept
a 'live and let live' attitude until this dire crisis blows over.
