Very sophisticated dining experience in a great way. I loved how they used fermentation so well weived into their dishes. I was able to taste different flavors in one dish well paired with the orange natural wine. Asparagus dish was my favorite. The pork was cooked to perfection very tender and well matched with the sauce. I think their fermentation techniques are so well paired with the ingredients. I traveled to Latin America where I had a chance to explore fermentation based cuisine. It reminded me so much of that great experience I had in Peru. Thanks to the chefs doing this kind of exploration. The dessert was really great with combucha added. Hope more people experience this.
