Had a deeply enjoyable dinner at Foliage — the kind of place that reminds you why intimate chef-led dining still matters. The restaurant is run by a lovely husband-and-wife team, and you can genuinely feel their warmth and care throughout the evening. Nothing felt forced or overly performative. Just thoughtful hospitality, quiet confidence, and a strong sense of identity. The food was precise yet soulful. A few dishes stood out immediately — delicate sashimi with a bright citrusy lift, luxurious siu mai crowned generously with caviar, and an excellent uni course that balanced richness without becoming overwhelming. Even the blue rice dish, which could easily have leaned gimmicky elsewhere, was surprisingly coherent and satisfying, with layered textures and restrained seasoning. Their beverage program was also fascinating. Seeing bottles from producers like Ulysse Collin alongside carefully curated sake selections immediately tells you this is a place run by people with genuine passion rather than trend-chasing. Singapore has no shortage of ambitious restaurants, but places like Foliage stand out because they feel sincere. You leave feeling hosted, not processed. Would gladly return. I used to go to their previous restaurant Allium and always had a great experience. This time around it was no different. Very interesting take on south east Asian flavours and I really enjoy the 'char siew'. Service was warm and friendly. The desserts are to die for and i would most definitely come back again.
