Freedom Bar, Bang Tao There is a particular kind of beach bar that understands its assignment, and there is Freedom Bar, which has clearly read the assignment, set it on fire, and gone for a swim. This is the sort of place where the gap between what you expect and what you get is wide enough to drive a longtail boat through, and I mean that as the highest compliment a man covered in salt and questionable life decisions can offer. Let’s start with the roosters, because you cannot not start with the roosters. They patrol the place like off-duty security with no contract and no fear, strutting between tables with the entitled swagger of creatures who have never once been told no. Nobody acknowledges them. Nobody shoos them. They are simply part of the ecosystem now, a feathered tax you pay for sitting this close to the sand. I watched one stare down a German tourist over a basket of fries and the German blinked first. Respect. But here is the thing nobody tells you. The roosters are not even the main attraction. While I sat there being judged by poultry, the actual headliners were out on the waterline: three horses walking the surf at dusk like they had somewhere better to be and were taking the scenic route anyway. This is the thing about Freedom Bar that no menu can communicate. You sit down for a cold drink of questionable freshness and the beach simply hands you a tableau. Horses. The headland going blue in the failing light. Waves doing their patient, indifferent work. Nobody staged this. It just happens, on a loop, for the price of sitting still. The setting does the heavy lifting, as it should. A thatched roof, bamboo posts, casuarina pines leaning in overhead like they own the lease. Plastic chairs in three competing shades, sun-bleached into a palette no designer would choose and no beach bar could survive without. A surfboard sign. A Coca-Cola disc glowing. A painted face on the wall with red lips and zero comment, watching the whole operation. Umbrellas furled and waiting. This is not a concept. Nobody focus-grouped this. It accreted, year by year, beer by beer, and that is precisely why it works. Now to the food, which tells a story the setting was too polite to mention. Chicken in a red sauce over elbow macaroni, finished with a flurry of grated cheese. The pasta is elbows. Not penne, not rigatoni, not anything that suggests a decision was made. Elbows, the shape that lives in a five kilo bag in every beach kitchen on this island, boiled to a softness that has long since stopped fighting back. The sauce is a competent, slightly sweet tomato situation with shredded chicken folded through it, the kind of red that comes from a place of good intentions and a tin. The cheese is the most interesting actor on the plate, grated fine and feathery, melting into a thin white veil and doing genuine work to convince you this is more than the sum of its parts. It almost succeeds. There is a moment, fork in, where the heat and the cheese and the sweet tomato line up and you think, yes, fine, this is exactly what I wanted at a beach bar with sand in my shoes and a rooster judging me from three feet away. And the orange smoothie. I want to be honest with you because honesty is the only currency that matters in a review. This smoothie did not taste fresh. Somewhere between the orange and the glass, time had passed, and that time was not kind to it. There was a faint suggestion of a concentrate that had seen things. And yet. And yet it was refreshing in the specific way that only a cold drink in punishing heat can be, the kind of refreshing that overrides your critical faculties entirely. I drank the whole thing. I would order it again. Make of that what you will. Five stars. One of them belonged to a rooster, but I’ve reassigned it to the horses, and added another for the chairs. Go before the light goes. Very relaxing place to kick back and have a beer, cocktail whatever looking over the water. No pressure, noone trying to sell you anything, can just just go up to the and oder your prices are very reasonable.
