A good entry point into Seoul's fine dining scene. Came in for the lunch course on my recent trip. Compared to other fine dining rooms in the city, the pricing felt reasonable, and watching a kitchen team of 4 or 5 run a full tasting menu gave the space an intimacy you don't usually get. The chef-owner is known as the "8-country master," a recognition of how many kitchens he's worked in around the world. His whole philosophy is built on what he calls "Seoul Style”. Borderless, lab-like cooking that strips away heavy traditional plating in favor of minimalist global technique to highlight the local terroir. In practice, though, that restraint was closer to safe than minimal. The food was delicious, but course after course, I kept waiting for the spark you'd expect from a resume that broad. It was a subtle, well-behaved progression that never quite delivered on the "8-country" premise. The one dish where it actually clicked was a cold soup. Essentially an elevated tomato water. The salty-sweet crunch of Daejeo tomatoes against the floral acidity of Jeju Cheonhyehyang citrus, with sorrel leaf running underneath. What made it really memorable was the popping red grains suspended in the broth. That tiny textural burst brought the whole bowl to life. The cod pie was the other one worth mentioning. It was built like a traditional beef pie with spinach inside and thick crust. And even with such a lean protein, the natural flavor of the fish came through nicely. I went here for the Spring 2026 menu. I think it was totally worth the money. Typically in Europe you pay twice as much for a similar experience. And I think the menu was leaning towards the higher end of such chief's dinners with attention towards creating diverse tastes and fine details and serving. I only thought that the word "Seoul" was a bit irrelevant here as it was not resembling other Korean food I tried elsewhere. From start to finish, the team at Seoul Dining demonstrated incredible hospitality. With my wife and I having multiple allergies, they accomodated us and produced the best combination of flavours we have ever had without compromising on quality. The wine was exceptional and the ambience was romantic and chill. The host took time to explain each component of the dish and ensured all dietary requirements were catered for.
