I genuinely think Haawm is doing the most honest and rad cooking around by resisting easy and sometimes tyrannical notions of authenticity. Only good things can come from a tastebud led research process that yields bold but well reasoned improvements to old/iconic/misunderstood recipes and that map clearly onto historical movements and material realities of capital and empire from Yunnan to Penang to Myanmar to Thailand and beyond. Shoutout to Ben for masterfully and patiently walking through all of those overlapping contexts for each course. As a guest it’s a gift to be entrusted with such an insightful and provocative experience. All that to say thank you for the obscenely good food and the free red light therapy. I’m so behind on my reviewing this year but Haawm was such a positive experience I have to say something now. Dylan and his staff presented such a wonderful meal without the stress I feel that comes with a lot of fine dining. You feel like you’re at a dinner party at a friend’s house, and that friend just happens to be an amazing cook. I may not have gotten the full experience as I didn’t sit at the communal table but did share a meal with one other gentleman who I spoke to a large portion of the night and honestly; it’s refreshing since you generally wouldn’t do that at any other restaurant. Dylan is An amazing chef/host/Master of all trades and the energy he brings is half the experience as well. There were no dishes that felt like filler. Every item was delicious, and we were given the perfect amount of food. I would also have to vote for the wine pairing as well which went wonderfully with the meal. Honestly six star. I won’t be visiting Thailand without coming back here and hopefully bringing friends. *also love the font, and color scheme for the restaurant menu.
