まだオーナーさんが日本人であるならスタッフさん達に麺の茹で方を再トレーニングしてあげて欲しい。。。 スープも全部味はいいけど茹ですぎ麺ブヨブヨで勿体無い。. Food: 3 Service: 4 Atmosphere: 5 Meal type: Lunch Price per person: ฿1–200

Hmmm... I am conflicted about Hachiban Ramen. On one hand, "within the Market Village Mall", this place is probably the most "approximate" Japanese style ramen, gyoza, chicken kara-age and Takoyaki shop. I ordered "Tan Tan Men" with an extra helping of the spicy "Tan Tan chili spiced minced pork" while my daughter had the regular "Cha-Shu Men" noodles. I feel that the soup for the ramen noodles is a bit salty and the portions are rather small. Whereas the Gyoza have a nice flavor, the chicken kara-age was not crispy and the meat was tough/chewy. The Takoyaki balls were mushy, but the flavor was OK. There's a dumpling shop in the basement that does much better Gyoza/dumplings at a cheaper price. On the other hand, our waitress was very attentive with great efficiency in taking our order and bringing the food to our table in the blink of an eye. She was friendly and professional. To be honest, I have not searched around Hua Hin for the definitive Japanese style ramen shop - it probably doesn't exist as there are so few Japanese expats here. Still, Hachiban Ramen will probably not be on my shortlist for Japanese noodles in Hua Hin. My apologies for forgetting to snap some photos.
