Had an amazing dinner at Hong Kong Cuisine 1983 last night! I went for the Tasting Menu, which the waiter mentioned is quite different from the à la carte dishes — and it really was. Every course was unique, creative, and full of surprises — a bit of molecular inspiration, beautifully presented, and just pure fun to eat. Two dishes really stood out: the crispy runny quail egg injected with smoked chicken soy sauce and caviar was incredible, and the layers of steamed egg white with fresh crab meat, Hua-diao wine sauce, and lily flower root foam, served in an eggshell, was simply stunning. What made the evening even more impressive was seeing the Head Chef personally finish and present some of the dishes tableside — such a great touch! Service was warm, attentive, and perfectly in tune with the whole experience. Truly one of the most creative and enjoyable tasting menus I’ve had in Hong Kong — can’t wait to come back!
