It’s all in the name: 'Hue 休' means 'rest', and '135 degrees' is apparently the sweet spot for cooking meat. And this is the foundation for the steak here – and they nail it. I’m talking next-level flavor and texture from beef that's been aged for weeks before reaching your plate. The chef grills it all up right there in front of you, which is an awesome touch.
