I struck lucky. A little late, just before nine. Most of Maxwell was already finished or preparing for the next day. Ju Fu Fang was still open. A cook-and-fry zi char stall, Hong Kong-style, its sign promising “high quality”. I chose Mongolian pork ribs with rice (S$6) and Black Pepper Beef (S$14). Ladle scoops, sauce pot to sauce pot, splash, flip, steam, flame, gone. Less than ten minutes from order to a Maxwell purple tray, sat down at a classic orange circular Formica table. Ribs in a deep red glaze, sliced onion and green chilli tangled through, rice sticky with the glossy sauce. The beef mahogany-dark, edges crisp, peppery not fiery, carrot and green bell pepper still with bite. Ju Fu Fang, good luck brought me to eat at this artisan’s workshop.
