First, a disclaimer that we visited the restaurant in February 2026, and the individual dishes and the ordering of the course may have changed since then. The best thing about Legume is that it does vegan fine dining in Seoul and does it well. Individual dishes, while most of them didn’t awe, were solid. Highlight of the meal for me was the eggplant cutlet, which was an optional add on. Herbs were layered into the eggplant, and the flavor and texture was fantastic with the doneness just right. The thing that I didn’t like about Legume is that while solid, there weren’t a lot of dishes that stood out to me, and the dish that did stand out was an add-on. The cutlet could be the signature dish of the restaurant, it’s a shame that it’s an optional item with an extra cost. As to the meal overall, it felt quite heavy and I found myself looking for more raw/pickled/spicy elements and palate cleansers, which I haven’t often experienced at a fine dining restaurants. The themes and flavors start to become quite repetitive such that dishes that I would have found more flavorful, such as the turnip or mushroom, ended up feeling bland and flat. I wanted to like the restaurant more and it’s such a shame that I didn’t. But there are great elements already in place, and they just need to be put together a little bit better. The food in this place is probably the best fine dining vegan food I have ever tasted (and I've been a vegan for 11 years). I ate here recently with my two non-vegan friends and we all have very different tastes in food but there wasn't a single dish that we didn't all love. I was extremely impressed with the portion sizes of the food as well as the quality, as fine dining doesn't usually fill you up very much. My only criticism was that they didn't have any vegan wine in the restaurant on the day we went so I couldn't try the wine pairings (so vegans, just be aware that some of the wine isn't vegan but they do know which ones are and which are not). Also, DEFINITELY get the extra dishes because the truffle dessert was all of our favourite dish. I would definitely visit again the next time I'm in Korea! Food: 5 Service: 5 Atmosphere: 4
