The sleek, uncluttered main dining area overlooks the open kitchen for a chef’s table-like vibe. With Alsace chef Christophe Lerouy at the helm, the kitchen excels in unexpected food and flavour combinations that never fail to surprise. The food is served omakase style – choose the number of courses and tell the servers about your allergies and dislikes...

Lerouy has long been my favorite French fine-dining restaurant in Singapore, and my five-star review does not fully do the dining experience I had earlier this week justice. Chef Christophe leads a kitchen that clearly believes in precision without pretension. The tasting menu moved through a beautiful sequence of modern French dishes, each one built around a confident idea. The opening oyster with buttermilk and wild garlic was a lovely, briny start, quickly followed by a delicate artichoke, smoked eel and ikura bite that set the tone for how thoughtfully texture and acidity would be used throughout the meal. The escargot with parsley and garlic that followed was an outstanding combination of flavors and textures, while the little Alsace bacon and Munster flammekueche, described on the menu as "Mom's Recipe," was a genuine, touching nod to the chef's roots. The bread course deserves its own mention: a warm, crackling sourdough loaf served with a trio of butters and a glorious pool of olive oil, simple in concept but exceptional in execution. From there the kitchen built real momentum. The prawn with jus de tête, saffron and lardo was rich and layered, the toothfish with sauerkraut and mustard seed offered a clever savoury-acidic contrast, and the spaetzle with uni and king crab was one of the best dishes I have had this year, luxurious but never heavy. The langoustine with sweetbread and lovage that came next showed real technical range, and the pigeon with zucchini and pimentón espelette that followed was cooked with a precision that only comes from a kitchen operating at full confidence. Dessert continued the same thoughtful pacing, from a bright rhubarb, strawberry and mint course through a French toast with Piemonte hazelnuts and vanilla, an Earl Grey chocolate bonbon, a beautifully presented Kuglof givre, and finally passionfruit and canelé to close. Every plate that arrived felt considered, not just visually but in how the flavours were sequenced across the whole meal. None of this would have landed the way it did without Rouela, the resident sommelier, whose wine expertise elevated the entire experience. Her recommendation of the Jean-Claude Lapalu "Cuvée des Fous" Brouilly was a particular highlight, and her warmth and knowledge made the whole evening feel personal. Lerouy is the kind of restaurant Singapore's dining scene needs more of: ambitious, French in technique but personal in spirit, and staffed by a team who are visibly proud of what they put on the table. I left full, genuinely moved by a few of the dishes, and already thinking about when I can go back. Highly recommended for anyone looking to celebrate a special occasion, or simply a reminder of why modern French cooking, done with heart, still has so much to offer. Food: 5 Service: 5 Atmosphere: 5 Meal type: Dinner Dietary restrictions: The team was happy to accommodate dietary restrictions, as long as you flag it when booking. They also reach out via WhatsApp to double check a few days prior to the meal.
