老舗やビブグルマン獲得の牛肉麺のお店よりも、近年開業した牛肉麺のお店の方がアタリが多いので こちらも試してみました。注文したのはトリュフ牛肉麺260元です。麺の種類は刀削麺を選択しました。麺の硬さを選べるのは牛肉麺店にしては新しいです、硬めで注文しました。期待通りブラッシュアップされた牛肉麺でした。牛肉もスープも美味しく仕上がっていましたし万人ウケする方向性です、トリュフの風味も十分で上手くまとまってバランス良かったです。茹で青菜に新聞紙のようなものが混入していたのは残念でしたが…

It was the recommended list from the beef competition list. Ordered 1 braised beef wide noodle soup and 1 clear broth beef wide noodle soup. The braised beef had a clean broth with a little bit of a heat. Not a whole not of depth but a good broth. Beef shank was tender and moist. Noodle was smooth in texture. The clear broth reminded me of a beef Vietnamese pho without the herbs. Due to the beef cut, the beef was tough with some chew. Taste and texture. Those are my main criteria. The taste is 5 stars. The texture is too soft to my preference. I pick the beef up with my chopsticks and it falls apart. The beef is on the dry side and the tendons are too gooey. The noodles are done to your liking. My wife has firm and I have "just right" and I could taste the difference between the two. Nice job there. Broth is also very flavorful. Queuing is methodically with a physical paper and a number. Service is brisk. Wait staff is polite and patient even though my mandarin sucks. Price per person: $200–400 Food: 4 Service: 5 Atmosphere: 4
