A beautifully executed Japanese-French dining experience that feels personal, restrained, and confident. Each dish showed clarity of thought and strong technique, with flavors that were layered yet never overwhelming. The ambiance is intimate and calm, allowing full focus on the food. Service was polished and thoughtful, and pacing throughout the meal was excellent. Nobuo is a restaurant that understands balance — between cultures, flavors, and emotion. A Michelin experience that feels earned rather than staged, and one I would happily revisit.
