本当に美味しいカツオのたたきが食べられるレストランです。お店の対応が少しお高く止まった感じがあることだけがちょっと気になりましたが、料理の味は間違いないです。ランチでずいぶん待たされて入ったら中はガラガラ。お客さんが出たあとの片付けが遅いのでしょうか、これはすごく残念に感じました。 Meal type: Lunch Price per person: ¥1,000–2,000 Food: 5 Service: 4 Atmosphere: 5

Tosa Cuisine Neboke – Nihonbashi It had been a year since I last met my friend, so I chose this place for our long-awaited dinner. We began, of course, with sake. Watching the chef sear bonito right before us was easily the highlight — the fragrance alone could carry the night. After that, though, the meal quietly settled into the ordinary. Each dish was well-composed and proper, yet lacked the spark that lingers. For those of us who enjoy sake above all, that might be enough. But if next time I were choosing this restaurant for a friend who truly looks forward to the food, I’d probably hesitate. Would this be the meal they remember? I’m not sure. Out of curiosity, I checked the Google reviews afterward. The replies to positive comments were polite — but felt unmistakably templated, almost AI-written. And, unsurprisingly, the more critical reviews remained unanswered. With such a prime location, guests will keep coming, but genuine hospitality isn’t something that can be automated. My sake was satisfying. But my curiosity, and perhaps my expectations, left a little hungry. 土佐料理 祢保希（ねぼけ）日本橋店 1年ぶりに友人と食事をすることになり、久しぶりの再会の場としてこちらを選びました。 乾杯はもちろん日本酒。目の前で鰹を炙る演出は香ばしく、手仕事の温度が感じられる素晴らしいひとときでした。 ただ、それ以外の料理は丁寧ではあるものの、どこか印象に残らない。 日本酒が主役の私には十分でしたが、 次回、料理を楽しみにしている友人のためにこの店を選ぶとなると──少し迷います。 記憶に残る“味の余韻”が、もう一歩欲しいところです。 食後にGoogleレビューを拝見すると、 高評価への返信は丁寧ながらどこか定型的で、「AIかな」と感じました。 一方で、低評価の声には返答がなく、そこに少し寂しさを覚えます。 立地の良さでお客様は集まるかもしれませんが、 おもてなしとは、温かい一言や小さな気づきの積み重ねなのではないでしょうか。 日本酒の余韻は心地よく、 けれど料理と接客の印象は、静かに冷めていく、、、。 そんな夜でした。 Meal type: Dinner Price per person: ¥9,000–10,000 Food: 3 Service: 3 Atmosphere: 3
