My parents have been loyal customers of Palsun at The Shilla Hotel for decades. We visited on March 18 for their wedding anniversary lunch. My father ordered “shark fin soup” as usual, but a completely different dish was served. What was truly disappointing was the staff’s response. Instead of acknowledging the mistake, the server insisted that he had ordered a different dish and continued to argue with a 70-year-old guest without any apology. She even went further to correct his wording, which was highly inappropriate. For a place of this level, this kind of attitude is unacceptable. The manager handled it properly, but the overall experience was very disappointing. Food: 3 Service: 1 Atmosphere: 3 Meal type: Lunch Price per person: ₩100,000+

Palsun (팔선, 八仙), the iconic high-end Chinese restaurant at The Shilla Seoul, stands as one of the world's premier destinations for authentic Chinese cuisine. Since opening in 1979 alongside the hotel's debut, it has earned legendary status in Korea—often hailed as the "military academy" of Korean Chinese cuisine and a "guesthouse for gourmets" welcoming state guests, VIPs, and discerning diners from around the globe. It is widely regarded as Korea's most prestigious and influential Chinese restaurant, with a profound tradition that has shaped the country's perception of fine mainland Chinese dining far beyond the localized Korean-Chinese fusion styles. Its culinary roots draw deeply from mainland China's diverse regional traditions, primarily: - Guangdong (Cantonese) cuisine — Emphasizing fresh ingredients, delicate flavors, and masterful techniques like steaming and stir-frying. Top chefs from Guangdong have long been central to the kitchen, bringing sophistication to dim sum, seafood preparations, and refined dishes. - Beijing cuisine — Represented through iconic preparations like Peking duck (often in collaboration with historic Beijing establishments such as Quanjude), showcasing imperial-style roasting and elegant presentation. - Sichuan (Szechuan) influences — Adding bold, numbing spice and complex layering to the extensive menu of hundreds of dishes. While some guests sense strong Shanghai or Sichuan roots, the core identity is a harmonious blend of these authentic mainland styles—Guangdong for elegance and freshness, Beijing for grandeur, and Sichuan for fiery depth—rather than any single dominance. This commitment to tradition, combined with relentless innovation and dedication from the chefs, creates the unmistakable sense of unwavering effort and diligence that defines every visit. The service is exemplary: professional yet warm, attentive without being stiff, and genuinely friendly, elevating the experience to true luxury. The elegant interior blends oriental heritage with modern artistry, functioning as a "gallery restaurant" featuring world-class works by renowned artists. Signature must-try dishes blend pure tradition with subtle Korean-inspired enhancements, particularly in premium seafood: - Essential classics include steamed 九絵 grouper (often highlighting Korea's exceptional fresh seafood), braised abalone, shark fin (or alternatives), and luxurious preparations that fuse Korean ocean bounty with Chinese techniques. - Unique Korean-exclusive favorites like jajangmyeon (black bean noodles) and jjamppong (spicy seafood noodle soup) appear in elevated forms—must-orders for their distinctive local twist unavailable elsewhere. - Personal standouts often include the restaurant's signature 辣子鶏 (Lazi Ji / Chongqing-style spicy chicken) for its bold heat and texture, stir-fried sea cucumber dishes showcasing pristine ingredients and wok mastery, and the opulent 佛跳牆 (Buddha Jumps Over the Wall / Fo Tiao Qiang)—a Fujian-inspired treasure of abalone, sea cucumber, shark fin (or substitutes), and more simmered into an intensely rich elixir. For younger diners, braised shark fin and crab fried rice remain perennial favorites. In short, a visit to Palsun is essential for anyone in Seoul seeking world-class Chinese cuisine. It delivers not just exceptional food, but a profound sense of heritage, relentless pursuit of perfection by the chefs, and impeccable hospitality—making it a timeless highlight of any trip to the city.
