It’s crazy you can get MICHELIN star hawker stalls - Raan Jay Fai has held 1 Michelin Star since 2018 staring in the inaugural Bangkok guide. Supinya Junsuta (nicknamed Jay Fai) is 81 years & is the only chef (she trades Wednesday through Saturday, from 9:00 AM to 7:30 PM), she won’t allow anyone else to cook nor expand as quality is sacrosanct. She uses about 200-250g of Poo Mah blue swimmer crab in her famous omelette - it can take 10kg of crab to generate 1kg of the whole lump & knuckle meat she uses, & it’s delivered daily from Talat Noi fish market, just nearby. The signature crab omelette (Kai Jeaw Poo) comes in at £33, roughly 10x more than a standard omlette elsewhere that might have 50g of shredded crab in it. Our total bill was £73 including drinks, the food was amazing especially that omelette, packed full of sweet crab wrapped in crispy egg. You can kind of definitely understand the hype but I think her other dishes stood out too in terms of flavour. We came just after lunch & its low season so there was no queue & TBH whilst I’m a foodie, I won’t queue an hour & up to 4-5 during its viral peak, for lunch.
