一つのMICHELIN 星: 美味しい料理。試してみる価値あり!

Traditional and novel converge at this Thai-Chinese fine dining restaurant from chef Pichaya “Pam” Soontornyanakij. Set in a historical Sino-Portuguese building that once housed Pam's family’s Chinese pharmacy, Potong blends rustic and modern décor from the ground-floor bar to the rooftop chill space...

You know the saying, “when all the stars align”? Well, it happened last night at Restaurant Potong. This was probably one of the most seamless and well-thought-through Michelin dining experiences I’ve ever had. Forget whether a restaurant has one, two or three stars. What matters is whether the chef truly understands what it means to uphold that Michelin accolade — and Chef Pam absolutely does. Of all the Michelin restaurants I’ve eaten at around the world, I honestly cannot remember another where the food, service and environment came together quite so perfectly. This place runs like a perfectly calibrated machine. Nothing seems to have been overlooked. The level of thought and attention to detail was almost crazy. Every course came with a fresh set of cutlery, and whenever chopsticks were required, even the chopstick rests were changed. When the maître d’ explained a dish at the presentation table, the spotlights actually shifted away from our dining table to illuminate her and the dish. I mean… lighting?! To that extent?! That tells you how meticulous this restaurant is. And almost everything has a story. Chef Pam doesn’t seem to create a dish simply because she feels like cooking something interesting. There is meaning behind it. One of the chocolates at the end of the meal, for example, was shaped after the logo of the traditional Chinese medicine business founded by her ancestors more than 100 years ago. The restaurant itself is equally meaningful. Potong occupies Chef Pam’s ancestral family building, which has been painstakingly restored. Even the wallpaper and individual rooms have stories. We were seated in the Tiger Room on the third floor, yet the wallpaper depicts eight female leopards — apparently because actual tigers would have been too fierce! It is this sort of detail that makes you realise how much thought has gone into the entire experience. Food-wise, I would give it 8/10. There were definitely hits and misses. The hits were 20/10; some of the misses, frankly, should disappear from the menu altogether. My favourites were Preserving and Generations, plus the absolutely crazy-good 14-day dry-aged duck. One important point: I think you need to know and enjoy Chinese food to fully appreciate what Potong is trying to do. It describes itself as progressive Thai-Chinese cuisine, and much of its creativity draws upon recognisable Chinese flavours, techniques and food memories. If you are familiar with Chinese food, you will frequently find yourself thinking, “Oh yes, this does taste like…” — and then appreciate how Chef Pam has reinterpreted it. So, would I return? Maybe, but probably not anytime soon. Perhaps in a couple of years. That is because while the food was very good, it wasn’t completely out-of-the-ballpark good for me. What truly blew me away was the overall experience — the service, storytelling, setting, precision and incredible attention to detail. That was exceptional. Restaurant Potong is an example of what a Michelin experience should feel like when every element comes together. Kudos to Chef Pam and her team. Keep innovating, keep refining the menu, and keep pushing. A truly memorable evening. Food: 4 Service: 4 Atmosphere: 4 Meal type: Dinner Price per person: ฿2,000+
