”Nonya Nasi Ulam : A kaleidoscope of colours and ingredients mimicking the colourful and intricate nonya costumes, jewellery and porcelain wares and baba culture. Truly a quintessential, Peranakan delicacy, prepared and eaten on special festive occasions.”
In Singapore, no Peranakan restaurants and eatery accomplish this intricate dish better than the one at Rumah BeBe, which is rarely available to diners - only when Nonya BeBe’s octogenarian mother is in the mood to prepare , balance the myriad of ingredients and finally toss it, the way we ‘lo hei’ the CNY Yusheng dish.
The nasi ulam is reminiscent of the ‘krabu ‘ or ‘ulam’ dishes eaten in the northern states of Peninsula Malaysia, bordering Thailand, particularly Penang, Kedah and Kelantan.
This dish, with a strong taste of diced uncooked vegetable, mini prawns and shredded fried ‘Ikan parang’ , heavy aroma of oriental herbs and raw , crunchy vegetable flavour , is typically Thai but adapted to local Peranakan taste.
Even then, the dry nasi ulam from Penang and other Thai influenced northern states is quite distinct from the southern nasi ulam which is more moist and flavourful, adapted to the Malacca and Singapore nonya taste.
I am not particularly fond of this delicacy but my elderly Peranakan friends and relatives especially the ladies, seem to love it. Bottom line: It’s an acquired taste. Either you love it or hate it.
