We booked the Spice Spoons cooking class (within Dara restaurant) three days in advance during our stay at the Anantara Layan Phuket Resort. Availability was limited, so we recommend reserving early. The class offers two options: a standard cooking session where you prepare and enjoy your dishes, or a more immersive experience that includes a market visit to select ingredients for your meal. Reservation and Welcome During the reservation process, we filled out a form to select our menu. This customization was great, as it allowed us to skip dishes we already knew how to prepare. On the day of the class, we were warmly welcomed with water, a glass of prosecco, and cool, moist towels. Chef Google and Chef Sun introduced themselves and shared insights about Thai cuisine, local ingredients, and international substitutions for cooking Thai food at home. The Cooking Experience 1. Appetizer: Pla Goong (Spicy Prawn Salad) We began with Pla Goong, a refreshing and spicy prawn salad. The shrimp were pre-cleaned (a thoughtful touch), leaving us to prepare the remaining ingredients. For those less confident with knife skills, assistance is available. Plating was my favorite part, especially with the precision plating tongs provided! 2. Soup: Tom Yum Goong (Spicy Prawn Soup) Next, we prepared the classic Tom Yum Goong. The balance of spicy, sour, and aromatic flavors made this dish a standout. Break Time After the soup, we took a short break to feed the fish and ducks in the nearby pond. The timing was perfect, as we were already starting to feel full (having finished breakfast just a few hours earlier). 3. Main Dish: Kang Kati Po (Crab Meat Curry) The main course was a rich and flavorful crab meat curry with spices and betel leaves, served in a coconut. It came with thin rice noodles, though I requested an additional side of rice to pair with the curry. 4. Dessert: Mango Sticky Rice Our final dish was the iconic mango sticky rice. While I’ve made this at home, the fresh pandan leaves and bamboo rice steamer traditionally used in Thailand are not commonly available in Europe. Chef Google also demonstrated how to slice and shape the mango beautifully—similar to preparing avocado for toast. Despite feeling completely full, I found room for dessert! Class Atmosphere and Accommodations The staff’s professionalism and international experience made the class seamless. They spoke perfect English, ensuring nothing was lost in translation. Understanding that most participants might not be accustomed to Thai spice levels, the chefs tailored the heat to each individual’s preference. For those like us who enjoy authentic spiciness, extra chili ️ was always available. Takeaways and Final Thoughts At the end of the class, we were generously gifted: • A personalized cutting board • Printed recipes of the dishes we made • A USB stick with 50+ additional recipes • A tote bag • The apron we wore during the session This experience was much more than a cooking class—it was an immersion into Thai culture. Food truly is a universal language, and learning to cook these traditional dishes deepened our appreciation for Thai cuisine. We highly recommend the Spice Spoons class for anyone interested in exploring the rich flavors and traditions of Thai food. It was an unforgettable highlight of our trip!
