Sushiko Honten is a pearl in a giant sea. And, unless you know where to look in Tokyo, it is impossible to find. Unless of course you happen to have good friends in the city who know where to look. This establishment is known for delicious food. Having recently eaten at Sushi Arai, I would be hard pressed to notice a great difference between the two. Except one is in the center of Ginza while the other is 10 min Uber ride in the opposite direction in Koto-ku, Tokyo across the bridge on a small quaint residential street, far from the tourists and crowds. This is where the locals go. The refined locals. Inside there is a counter, and behind it, a chef with hands that know things. This is what you notice first at Sushiko Honten, the décor, not the menu you cannot read, but the hands. They move with the quiet certainty of someone who has spent his life negotiating with the sea, and the sea, for reasons of its own, has agreed to cooperate. The chef is a surfer. This matters more than you might think. He has floated on the Pacific’s surface, felt its moods, read its temper in the curl of a wave. But he has also looked down, into the blue-dark below, where the things with fins and shells conduct their private lives. He knows the water from the inside, intimately, and with a respect born of having been occasionally humbled by it. What arrives on the plate or rather, what is placed before you with a deliberateness that suggests ritual, is not what you would find in the gleaming sushi temples of Ginza, those cathedrals of conspicuous refinement. This is something else. This is a quiet sentence spoken in a room where no one is trying to impress you, and so, naturally, you are devastated. You have come off the beaten path to find this place. Good. The beaten path is where food goes to become content. Here, in this unassuming room, each piece of nigiri is an argument — that the ocean is generous, that simplicity is not the absence of skill but its highest expression, and that the best meal of your life may be waiting in a town you’ve never heard of, served by a man who was, that very morning, watching the sunrise from a surfboard. You will leave Sushiko Honten changed. Not dramatically. Not in the way of revelations or conversions. But in the small, irreversible way of someone who has tasted something true, and must now carry that knowledge forward, into a world full of things that are not.
