! Chef Chon outdone himself yet again. Been following him since he was in Miraku. Really loved how he demonstrated his fine culinary skills, blending the right textures and tastes of every ingredient to create an exquisite Gastronomic experience. Every dish is an art - beautifully plated for the eyes; light on the palate; good choice of high quality ingredients. A Very satisfying meal that is well put together - most worthy of a birthday celebration. Must get the off menu uni ice cream. It’s a highlight! Food: 5 Service: 5 Atmosphere: 5

The restaurant presents a counter-centric dining experience rooted in Edomae principles, where attention to detail—particularly in rice preparation, fish handling, and pacing—forms the backbone of the meal. The Muni Omakase dinner menu, roughly S$200++ per person, unfolds in a deliberate progression of appetisers followed by a focused sushi sequence. While the format adheres to familiar omakase structure, several early dishes display a confident touch. The uni somen is particularly successful. The dish highlights high-quality sea urchin, al dente somen with restrained seasoning, allowing its natural sweetness and creamy texture to take centre stage. Likewise, the Hyogo oyster spring roll offers a pleasing contrast between crisp pastry and the rich, briny character of the oyster within. These courses demonstrate the kitchen’s ability to incorporate creative elements without straying too far from the overall balance of the menu. The restaurant’s Muni house roll stands out as a composed and well-judged signature item. Despite the complexity inherent in such rolls, the ingredients remain clearly defined and proportioned, avoiding the muddled flavours that often plague similar creations. The sushi course forms the core of the experience. The shari is served slightly warm with a balanced vinegar profile—neither overly sharp nor excessively sweet—providing an effective platform for the fish. The rice grains remain distinct and lightly aerated, demonstrating proper handling and seasoning. Among the more successful pieces were the chutoro, whose supple fat content delivered a clean yet indulgent mouthfeel, and the uni sushi, notable for its sweetness and generous portion. The tachiuo (beltfish) also impressed, lightly torched to accentuate its natural oils while maintaining delicacy. These selections highlight careful slicing technique and a good understanding of fish texture and temperature. Service at the counter is attentive and professional. The chefs maintain an approachable manner with diners while remaining focused on their craft. A small but telling moment occurred when a piece of aji sushi partially lost its structure during preparation; rather than serve a compromised piece, the head chef immediately sliced another portion of fish to remake it.
