Had an incredible meal at Sushi Sakuta. The ingredients were exceptionally fresh, with every piece of sushi showcasing the natural sweetness of the seafood. You can really feel Chef’s passion and dedication in every dish—the craftsmanship is top-notch. The ambiance was also wonderful, providing a serene and elegant setting for the meal. Highly recommend! Sushi Sakuta — An Exercise in Absolute Precision My first encounter with Sushi Sakuta came by way of my dear friend Sunil, and for that introduction I remain deeply grateful. Recently relocated from the Kempinski to its new home at Millenia Walk—just opposite Conrad Singapore—the restaurant has retained its hushed, almost reverential atmosphere, now paired with a discreetly elegant new setting. With only eight seats, securing a reservation is an exercise in patience and fortune; a month’s wait is not uncommon. From the moment one enters, the welcome is unmistakably Japanese: gentle, respectful, unhurried. One is seated not merely to dine, but to participate in a carefully choreographed performance of craftsmanship. Chef Sakuta is already a revered name within Singapore’s serious gourmet circles, and from the opening course it becomes immediately apparent why. The meal began with a snow crab preparation, served warm—almost soup-like—delicate yet deeply comforting. This was followed by pine flounder and Japanese garoupa, the latter quite simply sublime. Local garoupa, excellent as it may be, does not approach this level of refinement. The fish was cut and poached with extraordinary precision, its natural sweetness fully intact. Though described by the staff as “slightly spicy,” the dish would register to a local palate as merely adventurous—balanced, elegant, and entirely respectful of Japanese sensibilities. The leeks, incidentally, were exemplary. From there, the experience moved into its true domain: sushi at the highest level. The first nigiri—Japanese sea bass—was nothing short of revelatory. What stands out immediately is Chef Sakuta’s knife work: fluent, assured, almost hypnotic in its consistency. A whisper of freshly grated wasabi beneath the fish, followed by a brushstroke of the chef’s own soy sauce blend—so light it appeared lacquered—created a glistening sheen. One single drop of fresh Japanese lime completed the piece, lifting it into something truly memorable. This same mastery continued with leatherjacket, then Spanish mackerel, each slice displaying fish quality that can only be described as better than fresh—a term that sounds hyperbolic until experienced firsthand. The yellowtail was a particular eye-opener: a larger fish cut into impossibly thin slivers, then folded with origami-like precision over the rice. Again, that signature sheen—never overpowering, always controlled. The inevitable highlight, of course, was fatty tuna. While we joked with the chef about preferring a generous stick rather than a single slice—budgetary realities gently enforced by my host for the evening—the toro delivered everything one hopes for: richness, silkiness, and perfect temperature. Indulgent, yet never cloying. Another standout was the sea urchin, often a risky proposition even in high-end Japanese dining. Here, it was exceptional: a luminous pale orange, impeccably fresh. Combined with crisp seaweed and perfectly seasoned rice, it formed a harmony that remains unmatched in my recent memory. This was not merely a meal, but a deeply memorable dining experience—one of those rare evenings that linger long after the final cup has been cleared. Sushi Sakuta is not simply recommended; it is earned. If you are fortunate enough to secure a seat, you will be rewarded with sushi at its most refined, disciplined, and emotionally resonant.
