The interpretation of the sirloin cut was a bit disappointing, though it was still tender and enjoyable. The tenderloin, or “hire-katsu,” on the other hand, was fantastic—soft in texture with a pleasant flavor. The frying was done well, and the portions were generous enough to feel satisfying. Still, it feels like there’s something missing to make it truly stand out. For now, the sirloin doesn’t quite make my list of favorites.
