I dropped by TORI SOBA SAKE 銀座道しるべ and tried their 濃厚鶏つけ蕎麦 (paitan tsuke soba). The soup was rich and grainy, clearly made from a hearty chicken-bone broth. It had that thick, almost velvety texture—solid flavor if you’re into deep chicken umami. The noodles held up well and soaked in the broth nicely. Presentation was clean and the pace was relaxed. It’s a decent option if you’re curious about a deeper, less conventional soba experience. Aside from the soba, there’s plenty to choose from—especially if you come at night. The place specializes in chicken dishes like crispy-fried thigh and yakitori (chicken skewers). They also serve other izakaya-style bites: tempura, sashimi, rice bowls including duck seiro and chicken tempura don, plus stone-milled soba for a classic are available too. Overall, a solid lunch stop in Ginza/Yurakuchō with a twist on traditional soba—worth trying if you’re up for something different. Food: 3 Service: 3 Atmosphere: 3
