Dear Guest, Thank you very much for your visit last evening. We appreciate and take very seriously all comments and even opinions from guests. Firstly, we are sorry that your expectations were not met. Upon receiving your review, we have investigated the matters with the staff concerned and would like to respond to you as follows: (1) The pasta that you referred to is a chargrilled, burnt linguine. The style of this pasta is ‘harder’ in texture than usual as there are burnt bits on the linguine. We appreciate al dente is a very subjective preference even amongst our Italian guests. On our part, we have failed to explain the nature of this pasta when you ordered it. However, when you told our service staff that the pasta was “undercooked” or “hard”, our staff had offered to recook the pasta to a softer texture but you had said no. Despite that, our service staff should have been sensitive enough to offer a removal of the pasta that you did not finish from the bill when clearing your plate. (2) Referring to your comment about our uni being ‘smelly’, we did not receive any direct comments or complaints from you during or after dinner, and the dish was completely eaten when we were clearing the plate. Had we been notified, we could have offer a replacement for you. Notwithstanding the above, we have served many of the same uni dish and other uni dishes to other guests last night and had not receive any such similar comments. Please rest assured that before dinner service commences, we taste each box of uni that we receive fresh from Japan that night. Any off-tasting or problematic uni would be returned to the supplier and certainly not used. Please note we have reached out to you via whatsapp to follow up on the matters further.
