That said, the secret spicy dipping sauce is sour and spicy, quite appetising when paired with the beef. You can eat several pieces without feeling cloying, and it carries a solid Thai flavour profile. ｛ Thai-Style Raw Shrimp ｝. The shrimp is crunchy and refreshing, with absolutely no frozen taste. The natural sweetness of the prawn slowly emerges—that clean, delicate sweetness only found in live shrimp. The soul of the dish is the sauce: appetising sour lime notes, a hint of spicy chilli aroma, and a rich tanginess. Once the shrimp is dipped, the whole thing becomes wonderfully layered.
