Top Blade Steak Lab is generally positioned as a more affordable steakhouse in Hong Kong, so expectations were fairly grounded going in. I ordered a medium rare steak set that came with fries and some sides. The steak itself was average, which honestly aligns with the price point. You more or less get what you pay for. It wasn’t badly cooked, just not particularly flavourful or memorable in quality. If you’re coming here expecting premium beef, this isn’t that tier. The fries were alright. It’s fried food, so it’s hard to go too wrong. Crisp enough, edible, nothing to complain about. The soda drink was also very average, just a standard add-on that didn’t really add anything to the meal. Service, though, is where things really fall apart. It’s honestly some of the worst I’ve experienced in Hong Kong casual dining. And judging from the number of Google reviews calling this out, it’s clearly a known and recurring issue. Staff come across disengaged and uninterested, and the whole interaction feels reluctant rather than welcoming. What’s wild is that this has seemingly gone on for a long time. You do wonder if the same crew has just always been there, or if it’s actually the owners themselves rotating between counter, kitchen, and floor. Honestly, who knows. Hahahaha. Overall, Top Blade is fine if you want a cheap-ish steak and keep expectations low. But the service culture here really drags the experience down. Not somewhere I’d choose to return.
