とらふぐ亭 上野駅前店 — Review A rigorously traditional tiger pufferfish (fugu) specialist. No theatrics. No dilution for tourists. Execution follows the orthodox sequence and standards. The course progresses cleanly and correctly: fugu skin sashimi (tessa) deep-fried fugu hot pot (tetchiri) zosui rice porridge dessert. Each dish arrives in proper order, paced to build flavor rather than rush spectacle. Ingredient quality is the foundation. The tiger pufferfish is exceptionally fresh: firm, elastic texture; clear, sweet flavor in the sashimi; crisp exterior and tender interior when fried. The hot pot relies on the fish’s natural umami, not heavy seasoning. The final zosui concentrates everything that came before and closes the meal decisively. Technique is restrained and confident. Seasoning stays light. Sauces never lead. The fish remains the subject throughout—this is the benchmark of a legitimate fugu restaurant. Foreign diners can reserve directly via Google Maps. Process is straightforward and accessible. Bottom line: If the goal is an authentic, textbook Japanese fugu course—rather than a novelty experience—this is a high-certainty choice in Ueno and firmly qualifies as a must-visit.
