I had the pleasure of trying galbitang (Korean short rib soup) at Yeomultong, and it was one of the most satisfying bowls of soup I’ve ever had. The broth was incredibly clear, clean-tasting, and deeply flavorful without being greasy—a perfect example of slow-simmered mastery. What truly stood out was the presentation. The massive short ribs were served upright, giving the dish a dramatic, almost regal appearance. Topped with a generous heap of freshly sliced scallions and aromatic herbs, the visual impact was just as impressive as the taste. The meat was fall-off-the-bone tender, and the portion size was generous. Even the side dishes, especially the crispy, tangy kkakdugi (cubed radish kimchi), paired beautifully with the richness of the soup.
