A Dish That Keeps Calling Me Back Every time I step into Il Bel Paese at Discovery Bay, I make it a point to order their Pan-Fried Salmon — and honestly, it’s one of the best salmon dishes I’ve had on HK for years. The staffs service is excellent. The moment it arrives, the aroma alone makes you smile. The salmon is perfectly cooked: crispy golden skin on the outside, yet incredibly moist and tender inside, literally melting in your mouth. It’s cooked to perfection — never dry, never overdone. I was so impressed that I asked the chef how they achieve this magic. He was incredibly kind and took a moment to chat with me. He explained that they always aim to give their guests the best possible dining experience with healthy, thoughtfully prepared food. Their way is simple and straight forward! They vacuumed seat marination with italian herbs and spices, They first pan-fry the salmon to beautifully seal in all the natural moisture and flavours, then finish it gently in the oven. The result is a dish that’s not only incredibly delicious but also prepared in a way that’s kinder to the body. This simple act of care from the chef touched me deeply — especially knowing I can enjoy it with my kids, feeling good about what we’re eating together. If you’re in Discovery Bay (or planning a visit to Hong Kong), do yourself a favor and try the Pan-Fried Salmon at Il Bel Paese.
