Sperare is much more than a restaurant – it’s a place where you can truly feel the passion, care, and deep understanding of food in every dish and every drink. The concept of French-Asian fusion is executed beautifully. Each dish is thoughtfully crafted, with flavors that feel both refined and comforting. What impressed us most was that every item on the menu came with a detailed description, telling the story behind the ingredients and preparation. It’s clear that the team doesn’t just cook food – they genuinely love what they do and want guests to appreciate every ingredient. The quality of the ingredients was outstanding, especially the local Hokkaido produce, seafood, and game. Every plate felt carefully balanced and prepared with great attention to detail. The drinks were equally exceptional. From the wine selection and perfectly poured beer to the creative sake-based cocktails featuring yuzu, plum, kiwi, and other seasonal flavors, everything was delicious and thoughtfully paired with the food. Although the owner doesn’t speak much English, it was absolutely not a problem. With today’s AI translation tools, communication was easy, and her warmth, hospitality, and enthusiasm came across perfectly regardless of the language barrier. The atmosphere is warm, intimate, and authentic, making you feel more like a welcomed guest than a customer. One of the best meals we had in Japan. If you’re looking for a unique dining experience that combines French technique, Japanese ingredients, and genuine hospitality, Sperare is absolutely worth a visit. Highly recommended.
