unDer lab 路地にある小さな看板を見つけ、扉を開けると地下へ続く階段。 進んだ先には、レセプションと unDer lab のサインが現れます。 到着するとスタッフが丁寧に予約を確認し、席までエスコートしてくれました。 店内はカウンター席が中心で、 全席にスポットライトが当てられており、カクテルの舞台は最初から完成された状態。 中央にはアイランドバーが配置され、 この日はオーナーバーテンダー自らが、 テクニカルかつスマートな動きでカクテルを仕上げていました。 ワイワイする雰囲気というより、 落ち着いてカクテルと向き合う、大人向けの空間。 一人でも過ごしやすく、カウンター越しに技術を楽しめるのが魅力です。 スタッフの皆さんのホスピタリティも非常に高く、 メニュー説明は丁寧で分かりやすい。 英語対応はもちろん、翻訳アプリにも快く対応してくれるため、 観光客でも安心して楽しめます。 このお店ならではの体験は、 クラシックカクテルをベースに、好みの台湾茶を選んで“ツイスト”していくアプローチ。 完成された一杯を受け取るのではなく、 ゲスト自身がフレーバー選びに関わることで、 一杯のカクテルがよりパーソナルな体験へと変わります。 まさに“研究室（lab）”という名前にふさわしい体験でした。 カクテルの説明、味の確認、限定コースの案内まで、 どれもスムーズで押し付けがましさがなく、 終始とても居心地が良かったです。 いくつかのカクテルでは、 ガーニッシュや付け合わせが一緒に提供され、 そこにも台湾らしい素材が使われていました。 一瞬、ここが台湾であることを忘れかけても、 しっかりとローカルに引き戻してくれる構成が印象的。 味・見た目・接客、すべてが高いレベルでまとまっており、 知的で気持ちの良い時間を過ごせるバーでした。 価格帯は台湾のバーとして標準的。 ウォークインはやや難しそうですが、 予約システムはとても分かりやすく、Googleからそのまま予約ページにアクセス可能。 観光客にとっても使いやすい仕組みだと思います。 食事は今回していません。 ※あえて写真は載せません。 すでに他の方が素晴らしい写真を投稿しているので、 ぜひそれを見てから訪れてほしいです。 簡単な雰囲気を動画で載せてます！ 良かったら是非. Look, I haven’t written a review in a hot minute, and it’s only about my 4th time here that I decided to finally write one- And let me just say, not only are their cocktails in a league of its own- the service here is absolutely unparalleled. I’m a fan of the complex, fancy & somewhat spirit forward umami tastes. Their cocktails set the bar for taking a variety of fresh ingredients, their characteristics and seasonality, the processes in procuring and marinating, and setting the bar for crafting some of the best libations available in Taipei. LIBATIONS- Their cocktail menu is divided into distinctive categories: Seasonal, Tea-based, Cuisine/Food-essence, Classic favorites, and more. I tried a few of them, but my favorite hands down has to be their original Under Martini, which takes a twist on a classic Gin Martini but throws in that semi-salty-n-sweet Taiwanese tomato and plum essence. The savory and tasty lil tomato on a needle takes the place of your typical olive in an American martini. FOOD- I haven’t tried the whole menu yet, but my go-to favorite has been the Sichuan Pepper Beef Bourguignon, which is essentially a tasty beef rice dish with a poached egg, simmered veggies and a nice mustard green type spices that mix all in for a nice touch. I’ve also tried the ramen which is quite interesting too, as they add a side shot of shiaoxing wine to mix in for an extra layer of flavor depth. SERVICE- I wish I could say the service is just good- But in actuality (compared to most places from my experience in both Taiwan & the states), there’s was purely OUTSTANDING. It’s almost as if they studied and adopted the gold standard of customer service excellence. Upon arrival, I was greeted with a descriptive and comprehensive introduction of their menu and new specials. After being served my first two cocktails, I was asked for an honest feedback on how they were in comparison. My water was refilled without me even asking. You get the idea. OVERALL: A nice vibe & cute spot with solid cocktails, awesome food, and attentive staff who really take care of you.
