チャームゲーンのグリル担当シェフが先月オープンさせた新店舗。 彼が抜けてからチャームゲーンのグリルのメニューが弱くなり少し残念に感じていたので楽しみに訪問。 修行先であるナームと独立したチャームゲーンの良いところが前面に出たお料理がいただけました。 カレーもしっかりでできました。 川海老のグリルを贅沢に乗せたカレーで海老のコク、濃厚なミソが凝縮されたすごく好みのカレーでした。 --- 行くたびに進化を遂げるファイヤーマンのお店。 コースにカレーがないタイミング見ありましたが今回のタイミングではカレーを上手にコースに組み込み北と南の伝統料理を薪焼きで見事に表現。 ここでしかいただけない料理の数々です。 スモークしたごはんがびっくりする美味さ。 バンコクまでわざわざ行く価値があります。 現在は完全予約制になっています。. Absolutely incredible experience at Choen. We were on the Monsoon Foraging menu which featured ingredients from Isan, and you get to learn from the Chef where/how each ingredient was harvested, and how it made it to the plate. The dedication and passion in using native ingredients, and trying to show that to the world, it is really admirable. I was introduced to so many new ingredients that I’d otherwise never would have had the opportunity to experience, and yet the overall experience wasn’t daunting or scary. I mean chicken ovary, ant larvae - sounds intimidating but it was introduced in a way that felt like a nice complement, and most importantly, absolutely delicious. I highly recommend you checking out Choen, the owner-chef’s passion alone is worth the experience. Limited seats so bookings absolutely necessary. Excellent food and service! Can see the chef is very committed to give his culinary art to his customers. The service is attentive and comfortable. Each course is explained w details... English is good...and translated into written Chinese to ensure the customer can enjoys the art of food food, good services for the evening! Will definitely come back!
