An Unforgettable Kaiseki Experience at ぎをん福志, where every dish was a masterpiece of craftsmanship and seasonal harmony. We arrived five minutes early, as requested, and were the first guests to enter the intimate six-seat counter, with only the two of us at first. The experience felt incredibly personal, allowing us to watch the chef and staff work their magic up close. We were warmly greeted at the door by a kind lady who held a sign with my name. Though she didn’t speak English, her friendly demeanor and warm welcome set the tone for the evening, and we managed to understand each other perfectly. She worked quietly behind the scenes in the kitchen, while Chef Fukushi—the main star—took center stage behind the counter, orchestrating the kaiseki experience with remarkable skill. Shortly after, the other four guests arrived—a family from Tokyo visiting Kyoto on their way to the Expo in Osaka. The small counter setup made the dinner feel like a shared, special experience among all of us. The dinner began with a vibrant starter of white and green asparagus, scallop, crab, uni, and wasabi, accented by a delicate shiso yuzu jelly. This course was paired with a refreshing seasonal sake (Natsu no Namazake), which beautifully complemented the fresh, delicate flavors. Next came the poached conger eel with shrimp, plum sauce, and a delicate dashi broth. This dish was paired with a thoughtfully selected 2023 Riesling Kalkstein Pfalz Trocken, which balanced the dish’s subtle sweetness and umami perfectly. The sashimi course was a visual and culinary delight—a small boat presentation with soy sauce served first, featuring cucumber flower, squid, and aburame (greenling) enhanced with Okinawa pink salt and a touch of sudachi. A fresh, unpasteurized sake (Hiirazu from Kokuryu) elevated the clean flavors of the fish. The grilled white (shiro) amadai—rare and prized compared to its red and pink counterparts—dripped its fats on the charcoal, offering a rich, unforgettable flavor. I added a sake (Fuku) here to pair with this dish, which added a refined depth that balanced the richness of the fish. The eggplant dashi showcased crispy Miyoga (ginger stem) from Kamo—usually bitter but perfectly balanced here—and tender eggplant. I added a glass of umeshu (Suntory Plum Liqueur from Yamazaki Distillery) to pair with this dish, providing a sweet, aromatic accent that complemented its umami. The wagyu beef, thinly sliced and lightly poached, was tender and luxurious, served with fruit tomato and mitsuba (wild parsley). A bold 2021 Cigalus Rouge from Gérard Bertrand was the perfect pairing, enhancing the richness of the beef. The meal concluded with comforting soba noodles, followed by a flavorful crab rice with kani miso, a perfectly ripe mango, and a classic matcha. The crab rice was paired with The Yamazaki Single Malt Whisky, whose complexity and warmth provided a memorable finish to the meal. I ordered the most extensive pairing available (¥20,000), which included five drinks (two sakes, two wines, and one whisky). Not every dish had its own pairing, but each drink was carefully selected to highlight key courses. Additional drinks like the Fuku sake and the umeshu were ordered personally to further enhance the experience. Though Chef Fukushi didn’t speak English, he did his best to connect with us, showing genuine warmth and hospitality as he worked behind the counter. The host attended to us with English that was very understandable, informative, and accommodating—ensuring we felt welcome and well cared for throughout the evening. ぎをん福志 delivers a world-class kaiseki experience that seamlessly blends tradition with creativity, highlighting the best of Japanese cuisine.
