This is their signature laotan suancai yu, ordered mild in both heat and numbing, yet the balance is exquisite. Silken fillets of white fish arrive still quivering with residual warmth, each slice opaque and tender, the flesh parting with the gentlest pressure of chopsticks. They have drunk deeply of the golden, oil-slicked broth: first the bright, lactic tang of the fermented cabbage, then a slow-building warmth that blooms across the tongue without ever scorching. The spice is precise—assertive enough to quicken the pulse, restrained enough to let the clean sweetness of the fish remain the star. Beneath, translucent sheets of sweet-potato starch noodles have swollen into slippery, yielding ribbons, greedily absorbing every drop of the aromatic liquor.
