You know there is a problem when you walk into an almost empty restaurant (approximately 60 empty seats) and they can't seat you because of reservations. Restaurant owners: turning away people who want to buy your food doesn't make sense. The way to make money at a restaurant is to turn tables. You can't do that if nobody is sitting at them. You don't need to take reservations if you aren't at capacity all the time. Turning people away doesn't just lose you a sale, it loses you a potential return customer.
