旭達豆漿店 has the most gloriously delicious 蛋餅i’ve ever had. don’t be intimidated by the line, because it moves fast and it is SO worth the wait (also there are only three tables, but most people take out — the only thing is, people are constantly standing over you as they get their sauce to go / wait in line). starting with the actual 蛋餅 itself, it is immaculately crisp yet also soft at the same time, biting off cleanly. i appreciate how it was flakey in the sense that it was crispy, but it didn’t get all over the place, nor was it oily at all. the natural greasiness of the 餅 was perfectly undercut by the thick, fluffy? mild egg. now onto the best part — the sauce. by drizzling a generous amount of the gooey, thick soy paste onto the 蛋餅, you create an IMMACULATE combination of sweet and savoury flavours. the sauce was packed full of umami, it was so addicting i could literally drink it. wash it down with a sweet, cold, refreshing cup of 紅茶 and you have experienced taiwanese breakfast at its most glorious.
