Rating: (4/5) • The broth has a medium spicy-and-sour profile, with a noticeably sour taste and plenty of preserved vegetables, which makes the sourness stand out clearly. • The pork cartilage is the highlight: it’s so tender that it breaks apart with one bite, with a soft texture and easy separation from the bone, making it very satisfying to eat. • Overall, the flavour is rich and tangy, and the rice noodles are quite soft rather than springy, but the broth is bold and very appetising. ---.
