Like a good novel, the name of this restaurant perfectly sums up the whole experience. "The 8ble" plays on the word "edible" – and unfortunately, that's about as high as the bar goes. The location is absolutely spectacular, and the service is attentive and clean, but for an Italian, that's the only real reason to appreciate the evening. The kitchen serves up a classic example of mediocre "fusion" Italian food: almost every dish is drowned in a heavy cream base, a cheap trick that masks the lack of real technique. Honestly, with some store-bought sauce and pre-cooked spaghetti, my 9-year-old daughter could recreate these same recipes (effort and skill required: 3/10). The plating is pretty, but it's just window dressing. The lowest point? The carbonara. The plate had everything on it – mushrooms, clover, onion, garlic, and even cucumbers... the only thing missing was the eggs! Please, have some mercy and change the name of this dish. Bottom line: This is a decent experience for locals who aren't ready to venture into real "exotic" Italian cuisine. But if you're Italian or you truly love our culinary traditions, run away.
