부산가야밀면 Busan Gaya Milmyeon Milmyeon(밀면, cold wheat noodle) is a humble version of naengmyeon(냉면, cold buckwheat noodle). It’s usually cheaper, sweeter and sourer. During the Korean War, many people from the North escaped to the South. In Busan, there wasn't much buckwheat, so the refugees used wheat flour from American food aid to make noodles. This is basically Busan food and not easy to find outside of Busan. Daegu is near Busan and you can find several good restaurants there. This is one of those. Daegu branch of Busan originated franchise. Here's my routine of getting the most out of the food: 1. Order 물밀면(냉), which is Milmyeon with cold soup. 2. Ask the staff to give 온육수(hot soup) separately; then they will serve a steel cup with the soup in it. 3. Use the scissors and cut the whole noodle in half. This will make it easier to chew. 4. Mix the red paste and the soup nicely and eat. 5. Drink the hot soup in between, to prevent your mouth from getting too cold to enjoy the taste. 6.
