비양도 식당은 제주에서 보기 드물게, 음식의 균형과 완성도를 끝까지 놓치지 않는 곳이다. 정갈하게 구성된 반찬과 솥밥은 단순한 한 끼 이상의 밀도를 만든다. 솥밥은 반드시 예약하거나 입장 직후 바로 주문해야 하는데, 그만큼 조리 과정에 대한 기준이 분명하다. 이곳의 중심은 단연 갈치조림이다. 특히 늙은호박을 함께 사용한 조림은 흔한 제주식 양념과 결이 다르다. 달큰한 풍미가 갈치의 기름진 결을 자연스럽게 정리해주며, 자극적이지 않은 깊은 맛을 만든다. 향 역시 무겁지 않고 부드럽게 이어진다. 갈치구이, 고등어구이, 옥돔구이 모두 수준이 높다. 불의 온도와 생선의 수분감이 안정적으로 유지되어 있고, 억지로 과장된 맛이 없다. 좋은 재료를 정확한 방식으로 다루는 식당에 가깝다. 제주에는 유명한 식당이 많지만, 비양도 식당은 유난히 조용하고 단단하다. 과하게 설명하지 않아도 왜 사람들이 다시 찾는지 분명하게 이해되는 곳이다. Biyangdo Restaurant is one of the rare places in Jeju that never loses its balance or precision, from the first dish to the last. The carefully prepared side dishes and 솥밥 (stone-pot rice) create a meal with unusual depth and structure. The rice must be reserved in advance or ordered immediately upon entering, which reflects how seriously the kitchen treats timing and preparation. The braised cutlassfish is unquestionably the centerpiece. What distinguishes it is the use of aged pumpkin, which gives the dish a restrained sweetness unlike the sharper, heavier flavors often found in typical Jeju-style seasoning. The sweetness softens the natural richness of the fish without overwhelming it, creating a remarkably composed flavor and aroma. The grilled cutlassfish, grilled mackerel, and grilled tilefish are equally impressive. The heat control is exact, preserving both texture and moisture without relying on excess seasoning or presentation. It feels less like a tourist restaurant and more like a kitchen that understands ingredients with confidence and restraint. Jeju has no shortage of famous restaurants, but Biyangdo stands apart for being quiet, disciplined, and unmistakably refined.
