돼지 뒷고기 is a unique Korean term, a more accurate translation would be “pork neck tail meat” or “pork back meat”. 돼지 뒷고기 refers to meat trimmed from the pig’s neck, back, and other leftover cuts after the prime cuts are taken. It’s known for its chewy texture and rich flavor, often enjoyed in Korean barbecue. I had the opportunity to try 돼지 뒷고기 for the first time in Daejeon with my friend. The meat we tasted at this restaurant was chewy, light, and bouncy, with a unique texture that made it incredibly delicious. Most importantly, the food was fresh, and the owner’s exceptional service made us lose track of time as we ended up trying various other dishes as well. I was truly grateful for such special food experiences in Daejeon. Additionally, the area was relatively quiet compared to nearby regions, allowing us to have meaningful conversations with my friend and wrap up the day nicely.
